This recipe should be good for 5 loaves of Cinnamon bread.
Cube 2 lg idaho potatoes and boil in 3c water until they crumble
Separate and mash the potatoes keeping the water for later

In a separate bowl Mix 1 yeast packet with 1/4c warm water add 1 tsp sugar... set aside

In an XL bowl combine
2/3c sugar
1tsp salt
10 1/2 Tablespoons (2/3c veg shortening or margarine)
ADD
potato water and warm mashed potatoes, mix with a whisk
ADD 1-2c flour until mixture is room temperature.
(if the mixture is too hot the eggs will cook and the heat will kill the yeast)

add 2 lg eggs and yeast
Mix carefully (folding with a spatula works best)
Gradually add 4 - 5c flour being very careful not to mix too hard
Cover a countertop with flour and knead dough until barely sticky
Grease an XL bowl to set the dough in and let rise in the fridge overnight
In the morning take it out and let sit for an hr

Portion enough to make a rectangle about 18” x 8”
Cover the dough with melted butter or margarine













Add Cinnamon & sugar mixture


Cut into 3rds

Roll into tubes 


Braid the 3 tubes



Place the Bread in a greased pan

Proof the bread for 30 minutes or let it rise for an hr
Bake at 375 for 30 – 45 minutes, until the tops are brown and the sides look tan.  Different ovens may vary.

Paint the tops with melted butter / margarine
